Beet Salad with Goat Cheese
This salad is soooo delicious! I limit my cheese intake and this is one of the dishes I will eat with cheese. Goat cheese is a healthier cheese but any kind of cheese is not a nutrient dense food. It is very high calorie and according to Harvard Medical School's Nutrition advice, dairy is not a part of a healthy diet. (You can get enough calcium from greens and other foods and there's more to having strong bones than just calcium. See my blog on calcium.)

  • 6 medium beets
  • 1 head of romaine lettuce
  • ⅓ cup chopped walnuts
  • 1 t. maple syrup
  • 3 oz. goat cheese
  • 2 small oranges or 1 large orange
  • ¼ cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  1. Put beets in a covered dish with about ½ cup of water on the bottom and roast in oven at 450º. Cool beets in refrigerator. (If you did not do this and have a package of the already cooked beets on hand, that works, too!)
  2. Arrange romaine leaves on a 4 salad dishes,
  3. Cut beets in cubes and arrange on top of romaine leaves.
  4. Coat walnuts with maple syrup and place on top of beets.
  5. Sprinkle goat cheese over top.
  1. In a blender, blend orange(s), balsamic vinegar, and extra virgin olive oil.
